What’s Happening in the Vineyard

Our cover crop is filling in between the grapevine rows. We plant a special “Vitner’s Blend” containing Creeping Red Fescue, Chewing Fescue, Dwarf Perennial Rye Grass, Rose Clover, and Balansa Clover. This mix provides maximum benefits to the soil – increasing nitrogen levels, adding organic matter, and reducing topsoil erosion, all of which improve soil health. This creates a more sustainable vineyard ecosystem with reduced chemical reliance. This benefits not only our grapevines, but the surrounding area as well, as it provides a habitat for beneficial insects and diverse wildlife, improves air quality, and protects the soil for future generations of farming.

Grand Sonoma Wine Tasting Chicago
Sonoma County went to Chicago! Adruni Vineyards and 30 of our neighboring wineries descended upon The 167 Event Space above The Oakville Grill & Cellar in the Fulton Market area of Chicago on March 1st. The sold-out event brought over 400 attendees from the Chicagoland area together to experience Sonoma County wines. We had a great time sharing our wine and story, meeting new friends and catching up with visiting California friends.
From our House to Yours: Recipe of the Month
This month we are sharing Baked Mac & Cheese, a family favorite from Liz, our Sales & Marketing Director. We are in that strange weather season between winter and spring, so a comfort food meets refreshing Sauvignon Blanc is a great pairing. The brightness of our 2024 vintage balances the richness of all that melty cheese, and the smokiness from the gouda complements the wine’s acidity.
BAKED MAC & CHEESE
- 2 TBS butter
- 2 TBS flour
- 1 cup milk
- 8 oz cavatappi pasta
- 4 oz Smoked Gouda, shredded
- 4 oz Gruyere, shredded
- 2 oz grated Parmesan
- 2 oz panko-style breadcrumbs
- salt & pepper to taste
In a small saucepan, melt the butter and then remove from heat. Add flour and stir to blend. Put back on heat and add milk slowly while whisking constantly until milk is incorporated. Stir occasionally until thickened. Salt & pepper to taste.
Cook pasta according to directions on package. In a baking dish, layer half the pasta, then layer on the smoked gouda, then the other half of the pasta, then the gruyere cheese. Pour sauce evenly over the dish. Mix breadcrumbs and parmesan and sprinkle over the top. Bake at 325 for 30 minutes.
